Carob flour is derived from the dried pods of the carob tree, a member of the pea (legume) family. The carob tree is native to the Mediterranean region and the largest natural carob forest in Europe is on the southern coast of the island of Crete, Greece, near the village of Treis Ekklisies.
Carob has been used since the days of the Ancient Greeks, 4,000 years ago. Carob is mildly sweet and often used as a substitute for chocolate in baking. Carob does not contain caffeine or theobromine (the substance in chocolate that is toxic to dogs).
